  • 5.5 cup shredded rotisserie chicken
  • 2 cup cubed ham
  • 4 tablespoon unsalted butter
  • 0.25 cup all-purpose flour
  • 2 cup milk
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt add more to taste
  • 1.25 cup shredded Swiss cheese about 5 ounces
  • 0.25 cup grated Parmesan cheese
  • 1 cup Panko bread crumbs
  • 2 tablespoon butter, melted

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 casserole dish with cooking spray to prevent sticking.
  • Spread the shredded chicken evenly on the bottom of the casserole dish. Next, layer the cubed ham on top of the chicken.
  • For the cheese sauce: In a saucepan over medium heat, melt the 4 tablespoons of butter. Once melted, sprinkle the flour over the butter and cook for 1-2 minutes until it becomes dry and clumpy, stirring often to prevent burning.
  • Slowly whisk in the milk, ensuring there are no lumps. Add the Dijon mustard, lemon juice, garlic powder, and salt. Simmer for 3-5 minutes, whisking constantly until the mixture thickens. Remove from heat and stir in the Swiss and Parmesan cheese until melted and smooth. Taste and adjust salt as needed.
  • Pour the cheese sauce evenly over the ham and chicken layers in the casserole dish.
  • For the Panko topping: In a small bowl, mix the Panko breadcrumbs with the 2 tablespoons of melted butter until well combined. Sprinkle this mixture evenly over the top of the casserole.
  • Bake the casserole uncovered for 30-35 minutes, or until the breadcrumbs turn golden brown and the casserole is bubbly. Allow it to cool for 5-10 minutes before serving. This dish is delicious on its own or served over pasta or rice!

Notes

You can customize this casserole by adding your favorite vegetables like peas, broccoli, or bell peppers. Feel free to swap the ham for cooked beef or turkey for a different flavor.
