  • 8 ounces uncooked pasta
  • 2 breasts chicken, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon garlic powder
  • 0.33 cup chicken broth
  • 0.5 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 10.5 ounces cherry tomatoes, cut in half
  • 1.5 cups fresh baby spinach
  • 3.5 ounces feta cheese, cubed
  • 1 pinch red pepper flakes to taste
  • 1 pinch freshly grated parmesan cheese to taste

Instructions
 

  • Begin by boiling a large pot of salted water. Once boiling, add the pasta and cook according to package directions until al dente. Drain and set aside.
  • In a skillet, heat the olive oil over medium-high heat. Add the chicken pieces, dried oregano, and garlic powder. Cook for 5-7 minutes, stirring often, until the chicken is nearly cooked through. Remove the chicken from the pan and set aside. (Tip: Make sure to avoid overcrowding the pan to ensure even cooking!)
  • In the same skillet, pour in the chicken broth, Dijon mustard, and lemon juice. Stir until the mustard is fully dissolved and let it simmer for about 1 minute.
  • Add the halved tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until they soften and create a nice sauce.
  • Return the chicken to the skillet and heat through, ensuring it is fully cooked without overcooking.
  • Stir in the fresh spinach and feta cheese, allowing the spinach to wilt. (Tip: You can cover the skillet for a minute to help the spinach wilt faster!)
  • Toss the chicken and sauce mixture with the cooked pasta. If desired, add a splash of pasta water to achieve your preferred sauce consistency. Serve immediately, and feel free to sprinkle with red pepper flakes and freshly grated parmesan cheese for extra flavor.

Notes

For a vegetarian option, you can replace the chicken with chickpeas or your favorite plant-based protein. Feel free to add other vegetables like bell peppers or zucchini for added nutrition and flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
