  • 2 large chicken breasts, split Split lengthwise into thinner breasts
  • 1 tablespoon olive oil
  • Kosher salt & black pepper To taste
  • 3 tablespoons butter
  • 1 tablespoon chicken base Better Than Bouillon brand recommended
  • 4 tablespoons all-purpose flour
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 2 cups chicken stock
  • 0.5 cup water
  • 0.25 cup heavy cream Optional

Instructions
 

  • In a small bowl, mix together the flour, kosher salt, black pepper, onion powder, and garlic powder. This mixture will help thicken your gravy and add flavor, so mix well and set aside.
  • Lightly season the chicken breasts with kosher salt and black pepper. This simple seasoning enhances the overall taste of the dish.
  • In a large skillet over medium heat, add the olive oil. Cook the chicken breasts for about 5 minutes on each side, or until they reach an internal temperature of 165°F. This ensures they are cooked through and juicy.
  • Once cooked, remove the chicken from the pan and set aside. This step allows the chicken to rest, which helps retain its juices.
  • Lower the heat to medium-low, add the butter and chicken base to the pan, and stir until melted. This creates a flavorful base for your gravy.
  • Sprinkle in the flour-onion powder-garlic powder mixture, stirring well to form a roux. Cook for about 30 seconds to 1 minute until it becomes slightly golden. This step is crucial as it adds depth to the gravy.
  • Slowly pour in the chicken stock while scraping up any bits from the bottom of the pan. Add the water and whisk until smooth. Allow this mixture to simmer until thickened.
  • If desired, pour in the heavy cream for a richer gravy. This optional step adds a luxurious texture and flavor.
  • Shred the chicken if desired, add it back to the gravy along with any collected juices, and let it simmer for a few minutes. This step infuses the chicken with the gravy’s flavors.
  • Taste the gravy for seasoning and adjust if needed. A little extra salt or pepper can elevate the dish.
  • Serve the chicken gravy over mashed potatoes or rice. For a complete meal, enjoy it with peas and garlic bread on the side.

Notes

If the gravy is too thick, add more liquid. If too thin, simmer longer or thicken with a cornstarch-water mixture. Adjust seasoning by adding more onion powder, garlic powder, ground sage, or poultry seasoning for extra flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
