  • 1 pound ground chicken
  • 0.5 cup gruyere cheese, shredded
  • 0.5 cup breadcrumbs (such as Panko)
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 0.5 cup fresh parsley, chopped

French Onion Sauce Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 teaspoon fresh thyme, chopped
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground pepper, or to taste
  • 2 cups gruyere cheese, shredded

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • In a large bowl, mix ground chicken, gruyere cheese, breadcrumbs, parsley, egg, salt, and pepper. Shape into 15 meatballs and place on the baking sheet. Bake for approx. 25 minutes until golden and fully cooked.
  • In a large skillet over medium-low heat, melt butter with olive oil. Add sliced onions and cook until soft and golden, about 25 minutes. Stir in minced garlic and cook for 1 more minute. Pour in beef broth, add thyme, salt, and pepper. Bring to a boil, then simmer until slightly thickened for another 10 minutes.
  • Add cooked meatballs to the skillet and sprinkle with gruyere cheese. Cover and cook until meatballs are heated through and cheese is melted, about 5 minutes. Optionally, broil for 3-5 minutes until cheese is golden. Serve warm, garnished with thyme.

Notes

For a richer flavor, you can caramelize the onions longer until deeply golden. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
