  • 3 cups rotisserie chicken, shredded
  • 2 cups sour cream
  • 2 cans cream of chicken soup
  • 0.5 cup chopped black olives
  • 1 can green chilies
  • 1.5 cups grated sharp cheddar cheese
  • 0.25 cup chopped green onions
  • 1 tsp salt
  • 1 tsp pepper
  • 1 serving cooked rice enough for each person

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Shred the meat from the rotisserie chicken, using both white and dark meat. Spread the shredded chicken evenly in the bottom of a 9x13 inch baking pan.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, chopped black olives, green chilies, and green onions. Season with salt and pepper to taste, and mix well.
  • Pour the creamy mixture over the shredded chicken in the baking pan, spreading it evenly.
  • Sprinkle the grated cheddar cheese over the top of the casserole.
  • Cover the pan with aluminum foil and bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and return the pan to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve the cheesy chicken casserole over cooked rice for a complete meal. Enjoy!

Notes

For added flavor, consider mixing in some spices like garlic powder or paprika. You can substitute the black olives with diced bell peppers for a different twist. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
