  • 8 ounces dry penne pasta
  • 2 tablespoons olive oil
  • 1 pound skinless boneless chicken
  • 1 unit zucchini
  • 2 cups grape tomatoes
  • 1 cup frozen peas
  • 0.5 tablespoons dried basil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 4 cloves garlic
  • 0.33 cup heavy whipping cream
  • 0.25 cup grated fresh parmesan cheese
  • 1 unit chopped fresh basil

Instructions
 

  • Cook the penne pasta according to the package instructions. Once cooked, drain and set aside.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add it to the hot oil.
  • Cook for about 5 minutes, stirring occasionally.
  • Add the zucchini, grape tomatoes, and frozen peas to the skillet.
  • Season with dried basil, rosemary, and parsley.
  • Stir well to combine.
  • Add the minced garlic and continue to cook for an additional 3 minutes, stirring occasionally.
  • Stir in the heavy whipping cream and cook for another minute.
  • Add the drained pasta to the skillet and toss everything together.
  • Taste and adjust the seasoning with more salt if needed.
  • Remove from heat and sprinkle with grated parmesan cheese.
  • Garnish with fresh basil before serving.

Notes

For added flavor, consider using fresh herbs if available. You can substitute the zucchini with other vegetables like bell peppers or spinach for variety.
