Main Ingredients

  • 2 cups shredded chicken breast
  • 0.25 cup Greek yogurt
  • 1 baguette baguette, cut into pieces
  • 2 cups arugula
  • 2 Roma tomatoes Roma tomatoes, thinly sliced
  • 8 ounces mozzarella, sliced

Basil Pesto Ingredients

  • 1 cup fresh basil leaves
  • 3 cloves garlic, peeled
  • 3 tablespoons pine nuts
  • 0.33 cup grated Parmesan cheese
  • 0.33 cup olive oil

Instructions
 

  • In a food processor, combine the basil leaves, garlic, pine nuts, and Parmesan cheese. Season with salt and pepper to taste. With the processor running, slowly add the olive oil until the mixture is well blended and emulsified. Set the pesto aside.
  • In a large bowl, mix together the shredded chicken, ½ cup of the prepared pesto, Greek yogurt, and additional salt and pepper to taste. Stir until everything is well combined.
  • Take the toasted baguette pieces and layer them with arugula, sliced tomatoes, mozzarella, and the chicken pesto mixture.
  • Enjoy your delicious sandwiches right away while the baguette is still warm and crispy!

Notes

For a little extra flavor, consider adding sliced avocado or a sprinkle of red pepper flakes to the sandwiches. You can also use leftover rotisserie chicken for a quicker option.
