Ingredients

  • 1 packet 0.87 oz Brown Gravy Mix
  • 2 small boneless skinless chicken breasts
  • Salt and pepper to taste
  • 3 tablespoons flour
  • 1-2 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small yellow onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 8 oz. tomato sauce
  • ¾ lb. thin spaghetti
  • ½ teaspoon each: Italian seasoning parsley, mustard powder
  • ¼ teaspoon salt

Instructions
 

  • In a large measuring cup, mix the brown gravy packet with 1 cup of cold water until well combined. Stir in the tomato sauce and seasonings, then set aside.
  • Cut the chicken breasts into evenly sized cubes and season with salt and pepper. Sprinkle the flour over the chicken and toss to coat.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 3-4 minutes until golden brown. Flip and cook for an additional 3 minutes until fully cooked. Remove the chicken from the skillet and set aside.
  • Turn off the heat momentarily. Pour ¼ cup of chicken broth into the skillet and turn the heat back to medium. Use a silicone spatula to scrape the bottom and sides of the skillet to incorporate the flavors.
  • Add the butter and sliced onions to the skillet. Cook over medium heat, stirring often, until the onions are very soft and almost caramelized, about 20 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the remaining chicken broth and let it bubble gently for 5 minutes to reduce.
  • Pour the gravy mixture from step 1 into the skillet. Bring to a boil and let it thicken for about 30 seconds, then reduce to a simmer. Return the chicken to the skillet.
  • While the sauce simmers, bring a pot of water to a boil for the spaghetti. Once boiling, add salt (about ¼ tablespoon) and cook the spaghetti until al dente. Drain the pasta.
  • Add the cooked spaghetti to the sauce and toss to coat. Serve garnished with parsley and enjoy with garlic bread!

Notes

For a richer flavor, consider adding vegetables like bell peppers or mushrooms to the sauce. If you prefer a saucier pasta, use slightly less spaghetti.
