  • 1 lb chicken tenderloins
  • to taste salt
  • to taste pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 0.5 cup butter
  • 2 tablespoons minced garlic
  • 0.25 teaspoon red pepper flakes
  • 1.5 teaspoons salt
  • 1.5 cups uncooked white rice
  • 3 cups chicken broth
  • 0.5 cup fresh grated parmesan cheese

Instructions
 

  • Season the chicken tenderloins with salt, pepper, and garlic powder.
  • In a large nonstick skillet, heat the olive oil over medium heat. Add the chicken and sauté until nicely browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet, cover it, and set aside.
  • In the same skillet, add 1/2 stick of butter, minced garlic, red pepper flakes, and 1/2 teaspoon of salt. Sauté the garlic for about 3 minutes, being careful not to let it burn.
  • Increase the heat to medium-high. Cook for about 5 minutes, or until the mixture is reduced by half. Set aside 2 tablespoons of this sauce for later use.
  • Add the uncooked rice to the skillet and stir, cooking for 3-4 minutes until the rice starts to brown slightly.
  • Pour in the chicken broth and add the remaining 1 teaspoon of salt. Bring the mixture to a low boil, then reduce the heat to medium-low. Cover the pan and cook for 20 minutes, or until the rice is tender. Stir once or twice during the first 15 minutes of cooking.
  • Once the rice is cooked, sprinkle the parmesan cheese over the top. Arrange the chicken tenders on top of the rice and drizzle the reserved 2 tablespoons of pan sauce over the chicken.
  • Cover the skillet, remove it from the heat, and let it stand for 5 minutes. If desired, garnish with additional parmesan and chopped fresh parsley before serving.

Notes

For added flavor, consider using a mix of herbs like thyme or basil. You can substitute the chicken with shrimp or vegetables for a different twist. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
