- 1 1/2 cups panko breadcrumbs
- Oil spray
- 1 egg
- 1 tbsp mayonnaise
- 1 1/2 tbsp dijon mustard or other mustard
- 2 tbsp flour
- 1/2 tsp salt
- Black pepper
- 1 lb chicken tenderloins (or chicken breast cut into 2/3" / 1.5cm thick slices, lengthwise)
Preheat your oven to 200°C (390°F).
Spread panko breadcrumbs on a baking tray, spray with oil, and bake for 3 to 5 minutes until lightly golden. Transfer to a bowl.
Place a rack on a baking tray.
In a bowl, whisk together the egg, mayonnaise, mustard, flour, salt, and black pepper to create the batter.
Add the chicken into the batter and toss to coat.
Using tongs, pick up a piece of chicken and place it into the panko breadcrumbs bowl. Press down to make the breadcrumbs stick to the chicken. Transfer onto the baking tray. Repeat with the remaining chicken.
Lightly spray the chicken with oil and sprinkle with a touch of salt (optional).
Bake for 15-20 minutes until fully cooked.
Remove from the oven and serve immediately with your preferred sauce and fresh parsley if desired.
