  • 8 pieces chicken thighs (bone-in, skinless)
  • 2 cups mojo marinade store-bought is fine
  • 0.25 cups olive oil
  • 1 teaspoon salt divided
  • 1 medium yellow onion (diced)
  • 1 medium green bell pepper (diced)
  • 4 cloves garlic (minced)
  • 1 can tomato sauce (16-ounce)
  • 1 teaspoon dried oregano
  • 0.25 cups pimiento-filled olives
  • 2 packets Sazon Goya
  • 2 small russet potatoes (peeled and diced into 1" pieces)
  • 0.5 teaspoon ground cumin
  • 0.5 cups peas
  • 0.25 cups water

Instructions
 

  • Marinate the Chicken: Place the chicken thighs in a bowl and pour the mojo marinade over them. Cover and refrigerate overnight or for at least 4 hours for maximum flavor. This step is crucial, as it allows the chicken to absorb all the delicious flavors.
  • Prepare the Chicken: After marinating, remove the chicken from the marinade and pat dry with paper towels. Sprinkle with ½ teaspoon of salt for enhanced taste.
  • Heat the Oil: In a large pot, heat the olive oil over high heat. Make sure the oil is hot enough to brown the chicken properly, as this will add flavor.
  • Brown the Chicken: Add the chicken thighs in batches to the pot. Brown them for about 2 minutes on each side, then remove them from the pot and set aside. Avoid overcrowding the pan to ensure even browning.
  • Sauté the Vegetables: In the same pot, add the diced onion and green bell pepper. Sauté until the vegetables are translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional 2 minutes.
  • Combine Ingredients: Stir in the tomato sauce, water, ground cumin, Sazon Goya, olives, remaining salt, and the browned chicken thighs. Mix well to combine all the flavors.
  • Simmer: Cover the pot and let it simmer for 15 minutes. After that, add the diced potatoes and continue to simmer for another 20 minutes. This allows the potatoes to become tender and absorb the delicious sauce.
  • Finish with Peas: Just before serving, stir in the peas and let them heat through for a couple of minutes. This adds a nice pop of color and sweetness to the dish.

Notes

For added flavor, consider using fresh herbs like cilantro or parsley as a garnish. You can adjust the amount of olives based on your preference or substitute with capers for a different taste.
