Instructions
In a bowl, combine the chicken thighs with soy sauce, oyster sauce, black pepper, and corn starch. Mix well and let it marinate for 10 minutes to absorb the flavors.
Heat the oil in a non-stick pan over medium heat. Once hot, add the marinated chicken pieces. Cook for about 8-10 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Tip: Make sure the chicken is evenly spaced in the pan for even cooking.
Stir in the white parts of the scallions and cook for an additional 2-3 minutes until they soften. If your chicken pieces are larger, cover the pan to ensure they cook through. Finally, add the green parts of the scallions and stir for 10-20 seconds until just wilted.
Taste and sprinkle with additional black pepper or scallions if desired. Serve hot with rice or noodles for a delightful meal. Tip: For extra flavor, drizzle some sesame oil before serving.
