  • 0.9 lbs Chicken thighs (cut into small pieces)
  • 2 cup Scallions (chopped, separating white and green parts)
  • 4 tablespoons Oil
  • 2 tablespoons Soy sauce
  • 0.5 tablespoon Dark soy sauce
  • 0.5 tablespoon Oyster sauce
  • 0.5 teaspoon Black pepper powder (adjust to taste)
  • 2 tablespoons Corn starch

Instructions
 

  • In a bowl, combine the chicken thighs with soy sauce, oyster sauce, black pepper, and corn starch. Mix well and let it marinate for 10 minutes to absorb the flavors.
  • Heat the oil in a non-stick pan over medium heat. Once hot, add the marinated chicken pieces. Cook for about 8-10 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Tip: Make sure the chicken is evenly spaced in the pan for even cooking.
  • Stir in the white parts of the scallions and cook for an additional 2-3 minutes until they soften. If your chicken pieces are larger, cover the pan to ensure they cook through. Finally, add the green parts of the scallions and stir for 10-20 seconds until just wilted.
  • Taste and sprinkle with additional black pepper or scallions if desired. Serve hot with rice or noodles for a delightful meal. Tip: For extra flavor, drizzle some sesame oil before serving.

Notes

For a bit of heat, consider adding a pinch of red pepper flakes. This dish pairs wonderfully with steamed vegetables for a complete meal.
