  • 1 can chickpeas, drained and rinsed
  • 0.5 cup nut or seed butter (almond or cashew recommended)
  • 1 cup vegan dark chocolate chips, melted
  • 1 cup vegan dark chocolate chips, melted (for coating)
  • 1 tbsp coconut oil

Instructions
 

  • Start by draining and rinsing the chickpeas thoroughly to remove any excess sodium.
  • Melt the dark chocolate either in the microwave in 30-second intervals or using a double boiler on the stovetop.
  • In a food processor or blender, combine the chickpeas, nut butter, and melted chocolate chips. Blend for about 45-60 seconds until well mixed and smooth.
  • Use a cookie scoop to place the batter onto a baking sheet lined with parchment paper.
  • After the mixture is firm, roll the hardened dough into smooth balls and return to the freezer.
  • Melt the additional dark chocolate for dipping. Add the coconut oil to the melted chocolate.
  • Coat each truffle in the melted chocolate and place them back on the parchment-lined baking sheet.
  • Optionally, before the chocolate sets, sprinkle your desired toppings over the truffles.
  • Freeze the truffles until completely hardened.
  • Once set, store the truffles in the fridge.

Notes

For a fun twist, try different toppings like cacao nibs, goji berries, or shredded coconut to customize your truffles.
