  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 6 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon espresso powder optional
  • 0.25 teaspoon fine sea salt
  • 0.5 cup whole milk
  • 6 tablespoons unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 1 cup packed brown sugar
  • 0.5 cup chocolate chips
  • 0.5 cup chopped toasted pecans optional
  • 1.5 cups very hot water
  • vanilla ice cream for serving

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a medium-sized 8 x 8 inch baking dish.
  • In a medium mixing bowl, combine the flour, granulated sugar, 3 tablespoons of cocoa powder, baking powder, espresso powder, and salt.
  • In another bowl, whisk together the milk, melted butter, and vanilla. Add this liquid mixture to the flour-sugar mixture and stir until combined.
  • Pour the batter into the prepared baking dish.
  • In a separate bowl, mix the brown sugar with the remaining 3 tablespoons of cocoa powder. Sprinkle this mixture evenly over the batter.
  • Pour the very hot water over the top, but do not stir.
  • Place the baking dish in the oven and bake for 40 minutes, or until the center is just barely set.
  • Allow the cake to cool for 5 to 10 minutes before serving warm with a scoop of vanilla ice cream.

Notes

For an extra indulgent treat, top with whipped cream or a drizzle of chocolate sauce.
