  • 1 cup granulated sugar
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup powdered sugar for coating

Instructions
 

  • In a mixing bowl, whisk together the granulated sugar and vegetable oil until well combined.
  • Add the eggs and vanilla extract to the sugar mixture, and mix until smooth.
  • Sift in the flour, cocoa powder, baking powder, and salt. Stir until a thick dough forms.
  • Cover the dough and refrigerate for at least 4 hours or overnight.
  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Shape the dough into 1-inch balls and roll them in powdered sugar until fully coated.
  • Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the cookies have cracked and set around the edges.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a fudgier texture, slightly underbake the cookies by reducing the baking time by 1-2 minutes.
