Preheat your oven to 350°F (175°C) and line a baking sheet with two layers of heavy-duty aluminum foil.
Arrange the Ritz bits crackers in a single layer on the prepared baking sheet and set it aside.
In a 2 to 3-quart heavy-bottomed saucepan over medium-high heat, combine the butter, light brown sugar, vanilla extract, and 1/2 teaspoon of cinnamon. Bring the mixture to a low boil for 1 to 1 1/2 minutes, stirring frequently.
Remove the saucepan from the heat and carefully pour the butter mixture over the layer of Ritz bits crackers. Use tongs or a silicone spatula to coat the crackers evenly. Bake for 10 minutes.
In a small mixing bowl, combine the granulated sugar and remaining 3/4 teaspoon of ground cinnamon. Set it aside.
Once out of the oven, sprinkle the cinnamon and sugar mixture over the crackers. Allow them to cool completely. Once cooled, break the churro bites apart and serve.
Notes
For an extra touch, you can drizzle melted chocolate over the churro bites before serving.
