Ingredients
  

  • 4 6 oz boneless skinless chicken breasts
  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil plus more for brushing grill
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic minced
  • Salt and pepper

For the Avocado Salsa:

  • 1 1/2 medium avocados diced
  • 2 medium Roma tomatoes chopped
  • 1/2 cup chopped red onion
  • 1 clove garlic minced
  • 1 Tbsp fresh lime juice

Instructions
 

  • Place the chicken breasts on a cutting board and pound to an even thickness. Put them in a resealable bag.
  • In a bowl, mix lime zest, lime juice, olive oil, honey, cilantro, garlic, salt, and pepper. Pour over the chicken in the bag.
  • Seal the bag, rub the marinade over the chicken, and refrigerate for 2-4 hours, rotating halfway through.
  • Preheat a grill to 425-450°F. Brush with oil, grill the chicken for about 4 minutes per side until it reaches 160-165°F. Let it rest for 5 minutes.
  • For the avocado salsa, mix avocado, tomatoes, red onion, garlic, lime juice, salt, and pepper in a bowl.
  • Top the grilled chicken with avocado salsa and cilantro. Serve warm.

Notes:
- You can also pan-sear the chicken in a skillet or bake it in a greased pan at 400°F until it reaches 165°F.
