Ingredients
  

  • 1 ¼ pounds flank steak
  • cup olive oil
  • Zest and juice of 1 lime
  • 1 tablespoon minced garlic
  • ½ cup minced cilantro
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 2 cups cooked white rice
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 avocado
  • 1 batch cilantro lime crema

Instructions
 

  • In a bowl, whisk together olive oil, lime zest, lime juice, minced garlic, cilantro, salt, and pepper to make the steak marinade.
  • Place the flank steak in a shallow dish and pour the marinade over it. Marinate in the fridge for at least 1 hour.
  • Heat a cast iron pan over medium-high heat. Cook the steak for 3-4 minutes per side or until it reaches your desired internal temperature (around 145°F for medium-medium/well).
  • Let the steak rest for 10 minutes, then slice it into strips or cubes.
  • Assemble your bowls with rice, black beans, corn, avocado, steak, and top with cilantro lime crema.
  • Feel free to add chopped lettuce, sautéed bell peppers, onions, or any other toppings you like. Enjoy!
