  • 4 pieces sweet potatoes scrubbed clean
  • 1 tbsp extra-virgin olive oil for drizzling (optional)
  • 4 tbsp unsalted butter
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with foil.
  • Prick the sweet potatoes all over with a fork. If you'd like, rub a small amount of olive oil on the outsides.
  • Bake the sweet potatoes for 45 to 50 minutes until they are tender.
  • Let the sweet potatoes cool slightly, then split the tops open and add a pat of butter. Season with salt and pepper.

Notes

For a sweeter twist, sprinkle some cinnamon and a drizzle of honey on top of the butter.
