Classic Loco Moco

  • Rice cooker For cooking Calrose rice.

  • 2 cup Calrose rice Rinsed well
  • 1 lb ground beef 80% lean
  • 4 large eggs
  • 2 stalk green onions Thinly sliced

Instructions
 

  • Cook the rice according to your rice cooker’s instructions. Let it steam for an additional 5-10 minutes before serving.
  • Preheat a large cast-iron skillet over medium-high heat. In a mixing bowl, combine the ground beef, egg, panko breadcrumbs, Worcestershire sauce, seasoned salt, onion powder, and black pepper. Form the mixture into four equal patties.
  • Pan-fry the burger patties in the skillet with butter for about 3 minutes per side or until cooked to your desired doneness.
  • In the same skillet, cook the sliced mushrooms and onion in butter until tender. Add beef stock, Worcestershire sauce, and beef base. Thicken with cornstarch slurry.
  • In another skillet, melt butter and fry the eggs until the whites are set.
  • To assemble, place rice on a plate, top with a burger patty, gravy, fried egg, and green onions. Serve hot.

Notes

Recipe notes: Loco Moco is best enjoyed fresh but components can be stored separately for 3-4 days. Prep components in advance for a quick 15-minute meal prep.
