Ingredients
  

  • 5 lbs golden potatoes
  • 1/2 cup oil
  • Fiesta Potato Coating:
  • 1/4 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 tsp paprika
  • 3 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/2 tsp black pepper

Instructions
 

  • Wash and trim the potatoes. Boil in water for 20 minutes until slightly tender.
  • Drain and cool the potatoes, then dice into 1-inch chunks.
  • Toss the potatoes in oil until coated.
  • Mix flour, cornstarch, paprika, salt, cayenne pepper, and black pepper in a bowl. Coat the potatoes with this mixture.
  • Preheat oven to 425°F (220°C) and grease baking sheets. Spread the potatoes out to avoid overcrowding.
  • Bake for 40 minutes, rotating halfway through, until golden and crispy.
  • Serve with nacho cheese and sour cream or use in tacos.

Notes

For extra flavor, consider adding garlic powder or onion powder to the coating mix. These potatoes can be stored in an airtight container in the fridge for up to 3 days.
