  • 1 box Jiffy Corn Muffin mix (dry mix only)
  • 2 cups whole kernel corn (drained)
  • 2 cups creamed corn (not drained)
  • 1 cup sour cream
  • 0.5 cup melted butter

Instructions
 

  • Preheat your oven to 350ºF (175ºC) and grease an 8x8" baking pan with cooking spray.
  • In a mixing bowl, combine the dry Jiffy mix, drained whole kernel corn, creamed corn, sour cream, and melted butter. Mix until everything is well blended.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Bake uncovered for 45-50 minutes until the top is lightly golden brown.
  • Season with salt and black pepper to your taste.
  • If desired, garnish with fresh parsley or sliced green onion.

Notes

For a bit of heat, add a dash of cayenne pepper or a sprinkle of paprika to the mixture before baking.
