  • 1 pound ground beef
  • 0.5 large onion, thinly sliced
  • 6 to 8 Yukon Gold potatoes, thinly sliced
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic salt to taste
  • 1 teaspoon coarse ground black pepper to taste
  • 1.5 cups grated mixed cheddar and Monterey Jack cheese
  • fresh chopped chives for garnish

Instructions
 

  • In a large skillet with a lid, brown the ground beef over medium-low heat with minced garlic. Do not drain the fat; this adds flavor and moisture to the dish.
  • Add the sliced potatoes and onions to the skillet, layering them over the beef.
  • Sprinkle garlic salt and black pepper to taste over the mixture. Stir well to combine all ingredients and cover with the lid. Keep the heat at medium-low.
  • Let it cook for 15 minutes. Remove the lid, stir the ingredients from the bottom to the top to ensure even cooking.
  • Replace the lid and cook for another 15 minutes. Check for doneness and stir again if needed.
  • Once the potatoes are 'fork-tender,' turn off the heat. Cover the meat and potatoes with grated cheese. Put the lid back on for an additional 5 minutes until the cheese melts.
  • Garnish with fresh chopped chives for a pop of color and flavor.
  • Serve immediately, enjoying the comforting warmth of this delicious dish.
