  • 2 pounds chicken wings
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon finely chopped fresh parsley leaves
  • 1 tablespoon finely chopped fresh chives
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon kosher salt
  • 0.125 teaspoon cayenne pepper

Instructions
 

  • Preheat your oven to 425ºF (220ºC) and line a baking sheet with foil, placing a wire rack on top. This will help the wings cook evenly and get nice and crispy!
  • If needed, cut the chicken wings into sections. Pat them dry with paper towels and season with kosher salt and freshly ground black pepper. Place them on the wire rack, skin-side up. Drying the wings is crucial for achieving that crispy texture.
  • Roast the wings in the oven for 45-50 minutes until they are cooked through and crispy. You can check their doneness by ensuring the juices run clear when pierced.
  • In a large bowl, combine the melted butter, parsley, chives, garlic, Dijon mustard, lemon juice, smoked paprika, salt, and cayenne pepper to create the cowboy butter. This sauce is what takes the wings from good to great!
  • When the wings are almost done, toss them in the cowboy butter mixture until they are evenly coated. Make sure every wing is drenched in that buttery goodness!

Notes
