  • 2 cans whole kernel corn drained
  • 1 can black beans rinsed and drained
  • 0.5 cup mayonnaise
  • 4 ounces cream cheese softened
  • 1 cup mild cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 large jalapeño seeded and finely diced
  • 8 slices thick-cut bacon cooked and crumbled
  • 1 medium red onion finely diced (about 1/2 cup)
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • green onion chopped for garnish

Instructions
 

  • In a large bowl, mix together the corn, black beans, mayonnaise, cream cheese, cheddar cheese, mozzarella cheese, parmesan, jalapeños, bacon, onion, salt, and pepper. Stir well until all ingredients are combined. Tip: Make sure the cream cheese is softened for easier mixing.
  • Top with chopped green onion for garnish. Tip: A sprinkle of fresh herbs can enhance the flavor!
  • Serve with tortilla chips or crackers and enjoy!

Notes

This dip can be easily customized by adding diced bell peppers, a squeeze of lime juice, or a sprinkle of chili powder for extra flavor.
