Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
In a large bowl, combine the thawed hash browns, melted butter, cream of chicken soup, sour cream, diced onion, 1 1/2 cups of cheese, and black pepper. Mix well until fully incorporated.
Spread the mixture evenly into the greased baking dish and sprinkle the reserved 1/2 cup of cheese on top.
Bake for 45-55 minutes until the casserole is hot and bubbly. Broil for a few minutes for a crispy top, if desired.
