  • 32 ounces frozen shredded hash browns, thawed
  • 0.5 cup melted butter
  • 10.5 ounces condensed cream of chicken soup or cream of cheddar
  • 16 ounces sour cream
  • 0.5 cup finely diced onion
  • 2 cups shredded Colby cheese or cheddar cheese
  • 0.25 teaspoon black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • In a large bowl, combine the thawed hash browns, melted butter, cream of chicken soup, sour cream, diced onion, 1 1/2 cups of cheese, and black pepper. Mix well until fully incorporated.
  • Spread the mixture evenly into the greased baking dish and sprinkle the reserved 1/2 cup of cheese on top.
  • Bake for 45-55 minutes until the casserole is hot and bubbly. Broil for a few minutes for a crispy top, if desired.

Notes

You can customize this casserole by adding cooked beef or turkey for a heartier dish. For a crispy top, broil the casserole for a few minutes after baking.
