  • 2 teaspoons extra-virgin olive oil
  • 1 small onion, chopped
  • 8 oz white button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1.5 lbs boneless, skinless chicken breast, cut into strips
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 4 oz regular or reduced-fat plain cream cheese
  • 0.25 cup low-sodium chicken broth
  • 0.25 to 0.5 cup shredded mozzarella cheese
  • 3 tablespoons chopped fresh parsley (optional)

Instructions
 

  • Heat a large skillet over medium heat and add the olive oil.
  • Sauté the chopped onions and sliced mushrooms for 4-5 minutes until tender.
  • Add the minced garlic and sauté for another 30 seconds.
  • Season the chicken strips with kosher salt and black pepper.
  • Increase the heat to medium-high and add the seasoned chicken strips. Sear for 6-8 minutes until golden brown.
  • Add the cream cheese and chicken broth, stirring until the cream cheese is melted and mixed.
  • Sprinkle mozzarella cheese over the pan, cover, reduce heat, and cook for another 2-3 minutes until the chicken is cooked through.
  • Taste and season with extra salt and pepper if needed before serving.
  • Serve over steamed rice, garnished with parsley if desired.

Notes

For a richer flavor, you can use full-fat cream cheese and mozzarella.
