  • 0.5 cup peas
  • 1 pound cooked and diced or shredded chicken
  • 8 homemade country biscuits or biscuits of your choice

Instructions
 

  • In a large deep skillet, melt the butter over medium heat. Tip: Make sure the butter is fully melted before adding the onion for even cooking.
  • Add the diced onion and cook, stirring occasionally, until the onion is translucent and starts to brown slightly, about 3-5 minutes.
  • Stir in the flour, seasoning with salt and pepper to taste. Tip: This creates a roux, which will help thicken your sauce.
  • Pour in the chicken stock and stir until the mixture is well blended with the flour.
  • Gradually add the half-and-half while stirring continuously until the mixture is smooth. Increase the heat and cook until thickened, about 1-2 minutes, stirring constantly. Tip: Keep stirring to prevent lumps from forming.
  • Mix in the dried tarragon, peas, and chicken. Cook for a few more minutes until everything is warmed through. Adjust seasoning with salt and pepper as needed.
  • Serve the chicken mixture over the biscuits, or as desired. Tip: For a beautiful presentation, consider garnishing with fresh herbs.

Notes

For added flavor, consider using fresh herbs instead of dried tarragon. You can substitute the peas with other vegetables like carrots or corn for a different twist. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
