  • 3 pounds Yukon Gold potatoes, thinly sliced
  • 0.5 unit white or yellow onion, sliced
  • 2 tbsp salted butter
  • 0.25 cup all-purpose flour
  • 1.5 cups unsweetened almond milk (or regular milk)
  • 8 oz sharp cheddar cheese, shredded
  • 0.5 tsp garlic powder
  • 0.75 tsp salt
  • 1 unit black pepper
  • 0.5 cup Gruyere cheese, shredded
  • 0.25 cup grated Parmesan cheese
  • 1 unit fresh chopped parsley for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a 2-quart square or 8x12-inch baking dish.
  • Arrange sliced potatoes in tight slanted rows in the dish, adding onion slices in between and on top.
  • In a saucepan over medium heat, melt butter. Whisk in flour to create a roux, then gradually add almond milk while whisking until the mixture thickens.
  • Reduce heat, stir in cheddar cheese, garlic powder, salt, and pepper. Adjust seasoning as needed for taste.
  • Pour the cheese sauce over the potatoes and onions, making sure to cover them evenly.
  • Cover the dish with foil and bake for 45 minutes.
  • Remove the foil, sprinkle Gruyere and Parmesan cheeses on top, and bake for an additional 30-45 minutes until golden and potatoes are tender.
  • Garnish with parsley before serving. Enjoy your delicious creation!

Feel free to customize with different cheese varieties or add crispy bacon for extra flavor.
