  • 2 cup fresh broccoli florets
  • 2 tablespoon olive oil
  • 2 tablespoon unsalted butter
  • 1 unit sweet onion, diced
  • 2 clove garlic cloves, minced
  • 2 cup low-sodium chicken stock
  • 1.5 cup half and half
  • 2 tablespoon flour
  • 12 ounce gruyere cheese, freshly grated
  • 3 tablespoon finely grated parmesan cheese
  • salt and pepper, to taste
  • fresh chives, for sprinkling

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the broccoli florets on the sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 15 to 20 minutes until golden brown. Keep an eye on the broccoli to prevent burning, as oven temperatures can vary.
  • In a large stockpot over medium-low heat, melt the butter. Add onions, garlic, salt, and pepper. Cook until onions are translucent, about 5-7 minutes. Stir in the chicken stock.
  • Once the broccoli is roasted, add about ¾ of it to the pot. Blend the mixture until smooth. Be cautious while blending, as the soup will be hot.
  • Return the mixture to the pot over low heat. In a shaker bottle, combine flour and half and half, shaking well for 30 seconds. Slowly pour the mixture into the soup base while stirring. Cook for 2 to 3 minutes until slightly thickened.
  • Keep the soup over low heat and gradually stir in small handfuls of gruyere cheese until melted. Add parmesan cheese. Adjust seasoning with salt and pepper.
  • For the garlic breadcrumbs, in a small pan, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Toss in the torn bread pieces and cook until golden and crispy, stirring frequently.
  • Serve the soup hot, garnished with the remaining roasted broccoli, chives, and a generous sprinkle of garlic breadcrumbs on top. Enjoy!

Notes

For extra flavor, try adding crispy bacon bits or a dash of hot sauce to the soup.
