  • 1 Tbsp olive oil
  • 4 cloves garlic minced
  • cup chopped yellow onion
  • 1 pint cherry tomatoes halved
  • 1 Tbsp tomato paste
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 15 oz canned butter beans with liquid
  • 2 Tbsp cream cheese
  • 1 cup chopped fresh basil
  • Crusty baguette or toast for serving optional

Instructions
 

  • In a large pot over medium-high heat, add the olive oil and chopped onion. Sauté for about 1 minute, or until the onion becomes translucent.
  • Add the halved cherry tomatoes, tomato paste, salt, and black pepper to the pot. Cook for an additional minute, stirring occasionally.
  • Stir in the canned butter beans (with their liquid) and mix everything well. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
  • Remove the pot from the heat. Add the cream cheese and stir slowly until it melts, creating a creamy sauce.
  • Fold in the chopped fresh basil and mix until well combined. Your delicious dish is now ready to serve!

Notes

For a crunchy toast, slice a baguette and toast it in the oven until golden brown. Feel free to add other herbs like parsley or oregano for extra flavor.
