Main Ingredients

  • 12 oz Italian sausage casings removed
  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic minced
  • 2 tablespoons fresh sage chopped
  • 2 tablespoons fresh thyme
  • 1 pinch salt to taste
  • 1 pinch coarsely ground black pepper to taste

Instructions
 

  • Slice the Italian sausage after removing it from the casings.
  • In a large skillet, heat olive oil over medium heat.
  • Add the sliced sausage and cook for 4 minutes without turning.
  • Flip the sausage and cook for an additional 2 minutes until browned.
  • Add gnocchi, heavy cream, and chicken broth; bring to a boil.
  • Cover and let cook for 5 minutes on medium heat.
  • Add butternut squash puree and garlic; bring to a boil then reduce heat.
  • Cook for 3 minutes or until gnocchi are cooked through.
  • Stir in half of the sage and thyme; season with salt and pepper to taste.
  • Serve topped with remaining sage and thyme.

Notes
