  • 2 tablespoon butter
  • 1 small white onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoon Cajun seasoning
  • 5 cups chicken stock or 4 cups chicken stock + 1 cup water
  • 1 14.5-ounce can diced tomatoes undrained
  • 1 cup heavy cream at room temperature
  • 1 cup ditalini or other small pasta dry
  • 1 pound chicken breasts or tenders
  • 1 tablespoon neutral oil
  • 1 cup freshly grated parmesan at room temperature
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Instructions
 

  • In a large Dutch oven, melt the butter over medium-high heat. Add the chopped onions and minced garlic, sautéing for about 5 minutes until they are tender. Stir in 1 tablespoon of Cajun seasoning, enhancing the flavors.
  • Remove the pot from heat and stir in the chicken stock, diced tomatoes, and heavy cream. Bring the mixture to a boil, then reduce the heat to medium and let it simmer rapidly for a few minutes.
  • Add the dry pasta into the Dutch oven and stir well. Cook for about 10 minutes, stirring regularly to prevent sticking. This ensures the pasta cooks evenly and absorbs all the delicious flavors.
  • While the pasta cooks, season the chicken with the remaining 1 tablespoon of Cajun seasoning, ensuring it’s well-coated on all sides.
  • In a small skillet over medium heat, heat the neutral oil. Cook the seasoned chicken for 3 to 5 minutes on each side until golden brown and cooked through. Transfer the cooked chicken to a cutting board, let it cool, then chop it into bite-sized pieces.
  • Reduce the heat under the Dutch oven to low. Stir in the grated parmesan until well combined, creating a creamy texture. Add the chopped chicken pieces and let the soup simmer for an additional 2 to 3 minutes.
  • Taste the soup and season with salt and pepper as needed. Serve the soup in bowls, garnished with sliced green onions for a fresh touch.

Notes

You can use pre-cooked chicken or rotisserie chicken to save time. For extra flavor, consider adding a dash of hot sauce or red pepper flakes.
