Creamy Chicken and Mushroom Slow Cooker

Ingredients
  

Main Ingredients

  • 1 cup sliced brown onion
  • 2 cloves crushed garlic
  • 2.2 lbs chicken thigh fillets, trimmed and sliced
  • 1 tbsp sweet paprika
  • 1 can (420g) condensed cream of chicken soup
  • 7 oz button mushrooms, sliced
  • 5.3 oz sour cream

Instructions
 

  • In the slow cooker, place the sliced onion and crushed garlic.
  • Toss the sliced chicken with paprika and 1 teaspoon of salt. Arrange the seasoned chicken evenly on top of the onion.
  • Pour the condensed cream of chicken soup and half a cup of water over the chicken. Cook on high for 3 1/2 hours.
  • After 3 1/2 hours, add the sliced mushrooms and sour cream to the slow cooker. Stir well to combine. Cook for an additional 30 minutes.
  • Taste and adjust seasoning with salt and pepper if needed.

Notes

For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
