  • 1.5 pounds chicken breasts, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2.5 cups chicken broth
  • 1 cup long-grain white rice
  • 0.5 cup heavy cream
  • 0.5 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped parsley for garnish optional

Instructions
 

  • Preheat a large skillet over medium-high heat and melt the butter completely.
  • Add the diced onion to the skillet and sauté for 2-3 minutes until the onion softens.
  • Place the cubed chicken in the skillet, add Italian seasoning, black pepper, and salt. Cook for about 5 minutes, stirring frequently until the chicken is golden on all sides.
  • Stir in the minced garlic and cook for one minute, stirring continuously.
  • Add the chicken broth and rice to the skillet. Stir well to combine all ingredients.
  • Bring the skillet to a boil, then reduce the heat to medium-low, cover with a lid, and let it simmer for 17-20 minutes until the rice is tender and most of the liquid is absorbed.
  • Remove the lid and stir in the heavy cream and grated Parmesan cheese until the mixture is creamy and well combined.
  • Serve the dish immediately, optionally garnished with chopped parsley for a fresh flavor and visual appeal.

Notes

For added flavor, consider using homemade chicken broth. You can also customize this dish by adding vegetables like peas or carrots for extra color and nutrients.
