  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 4 pieces chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cloves garlic, minced
  • 1 piece shallot, finely chopped
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream or half-and-half for a lighter option
  • 0.5 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 piece spaghetti squash
  • 1 tablespoon fresh parsley for garnish (optional)

Instructions
 

  • Start by carefully piercing the spaghetti squash several times with a knife. Place it on a microwave-safe plate and cook on high for 8-12 minutes, or until tender. Once cooked, let it cool while you prepare the chicken.
  • Season the chicken pieces with salt, pepper, and Italian seasoning.
  • In a large, deep skillet, melt 1 tablespoon of butter over medium-high heat. Add the seasoned chicken and cook for about 7 minutes, or until it’s no longer pink in the center.
  • Remove the chicken from the skillet and place it on a plate. Cover it with aluminum foil to keep warm.
  • In the same skillet, add the remaining tablespoon of butter, along with the minced garlic and shallot. Cook for 1-2 minutes, or until they start to soften.
  • Stir in the sun-dried tomatoes and cook for an additional minute.
  • Pour in the heavy cream and heat until hot and bubbly, about 1-2 minutes.
  • Turn off the heat and mix in the grated Parmesan cheese and baby spinach. Return the cooked chicken and any juices back to the skillet, stirring to combine.
  • Once the spaghetti squash is cool enough to handle, cut it in half lengthwise, remove the seeds, and use a fork to scrape out the strands.
  • Gently stir the spaghetti squash strands into the creamy chicken sauce until they are evenly coated.
  • If desired, garnish with fresh parsley before serving.

Notes

For added flavor, consider using fresh herbs like basil or oregano. You can substitute the heavy cream with a lighter option, such as half-and-half, for a healthier version.
