  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 2 tbsp garlic, diced
  • 1 2 chicken stock
  • 1 2 roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • 1 2 parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • 1 2 pepperoncini peppers, drained

Instructions
 

  • In a large, heavy pan over medium-high heat, melt the butter.
  • Season the chicken with salt and pepper, then add it to the pan.
  • Brown the chicken on all sides by turning it every couple of minutes, about 8 minutes in total.
  • Remove the chicken from the pan.
  • Add the garlic and onion to the pan and let them brown for about 5 minutes.
  • Pour in the chicken stock and roasted red peppers, letting it reduce by half for another 5 minutes.
  • Turn off the heat, then slowly stir in the cream and parmesan cheese, whisking vigorously as you add the cream.
  • Gradually bring the heat back to medium-high, add the Italian seasoning, pepperoncinis, and return the chicken to the pan.
  • Let the sauce reduce by half and ensure the chicken reaches 165 degrees Fahrenheit internally.
  • Once done, remove from heat and serve over vegetables, pasta, rice, or enjoy it on its own!

Notes

Feel free to adjust the spice level by adding more or fewer pepperoncini peppers according to your preference. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
