  • 5 strips beef bacon
  • 2 large chicken breasts cut in half lengthwise
  • 0.5 teaspoon garlic powder
  • 1 to taste salt
  • 1 to taste pepper
  • 1 cup flour for dredging
  • 2 tablespoons butter
  • 7 ounces cremini mushrooms sliced
  • 0.25 teaspoon Italian seasoning
  • 3 cloves garlic minced
  • 0.5 cup non-alcoholic white wine substitute for Riesling
  • 0.75 cup heavy cream
  • 8 ounces uncooked spaghetti
  • 2 tablespoons butter
  • 0.5 cup freshly grated Parmesan cheese

Instructions
 

  • In a large pot, bring salted water to a boil. Cook the spaghetti according to package directions until al dente. Aim to finish cooking the pasta around the same time as the chicken. Once done, drain the pasta, return it to the pot, and toss with 2 tablespoons of butter and 1/2 cup of Parmesan cheese until well-coated. Keep covered until ready to serve.
  • In a skillet over medium-high heat, fry the bacon pieces until crispy. Once cooked, transfer the bacon to a paper towel-lined plate, leaving 2-3 tablespoons of bacon fat in the skillet.
  • Cut the chicken breasts lengthwise into thinner pieces. Season each piece with garlic powder, salt, and pepper. Dredge the chicken in flour, shaking off any excess.
  • Return the skillet to medium-high heat. Add the chicken pieces and cook for 4-5 minutes until golden brown but not fully cooked. Transfer the chicken to a plate.
  • In the same skillet, add the butter, sliced mushrooms, and Italian seasoning. Cook for 5-6 minutes until the mushrooms release their moisture and become nicely seared.
  • Stir in the minced garlic and cook for about 1 minute. Then, pour in the non-alcoholic white wine, scraping any brown bits from the bottom of the pan. Let it bubble for 2-3 minutes until the liquid reduces by half.
  • Stir in the heavy cream, then return the chicken and bacon to the skillet. Cook for about 5 minutes until the sauce thickens and the chicken is cooked through. Taste and adjust seasoning with extra salt and pepper if needed.
  • Spoon the creamy chicken and bacon mixture over the buttered Parmesan pasta and enjoy your delicious meal!

Notes

No alcoholic drinks allowed, please substitute with a non-alcoholic option. For a lighter version, you can use half-and-half instead of heavy cream. Feel free to add spinach or other vegetables for extra nutrition.
