  • 1 tablespoon oil
  • 1 teaspoon seasoning salt
  • 0.25 teaspoon garlic powder
  • 3 cloves garlic finely minced
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 0.25 teaspoon salt
  • 0.125 teaspoon freshly cracked black pepper
  • 3 cups cheese tortellini (fresh or frozen – about 330 grams)
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley for garnish

Instructions
 

  • Heat a large skillet over medium-high heat and add the oil.
  • Cube the chicken and add it to the pan. Season with seasoning salt and garlic powder. Cook until beginning to brown, about 3-4 minutes, stirring occasionally.
  • Add the minced garlic and cook for 1 minute.
  • Stir in the chicken broth, heavy cream, salt, and pepper. Bring to a simmer.
  • Add the tortellini and bring back up to a simmer. Cover with a gap for steam to escape. Reduce heat to medium-low and cook until the tortellini is tender and the sauce has slightly thickened, about 5-6 minutes.
  • Stir in Parmesan cheese and fresh parsley to your liking. The sauce will thicken as it sits. If you prefer a thicker sauce, mix 1 teaspoon of water with 1 teaspoon of cornstarch and stir it into the pasta while simmering.
  • Taste and adjust seasonings before serving.

Notes

Recipe notes: If the sauce is too thin, you can thicken it with a cornstarch slurry. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
