  • 2 pounds boneless, skinless chicken breast, cut into thin cutlets
  • 1 cup Italian style bread crumbs
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil plus more as needed
  • 16 ounces penne pasta, uncooked
  • 6 tablespoons butter
  • 4 cloves garlic, pressed
  • 2 tablespoons flour
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup chopped parsley for garnish optional

Instructions
 

  • Cook the penne pasta according to the package instructions until al dente. Be sure to stir occasionally to prevent sticking.
  • While the pasta is cooking, cut the chicken breast into thin cutlets or pound them to an even thickness for even cooking.
  • In a bowl, combine the bread crumbs, parmesan cheese, garlic powder, and salt. Mix well.
  • Coat each chicken cutlet generously with the bread crumb mixture on both sides, pressing gently to adhere.
  • Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once hot, add the coated chicken cutlets. Cook for 4-5 minutes on each side until they reach an internal temperature of 165˚F. Remove the chicken from the skillet and set aside.
  • Cook the chicken in batches to avoid overcrowding the skillet, adding more olive oil as necessary to prevent sticking.
  • In the same skillet, melt the butter over medium heat. Add the pressed garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  • Stir in the flour until well mixed, then slowly pour in the chicken broth, stirring constantly until smooth. Bring the mixture to a simmer and let it thicken for about 60-90 seconds.
  • Season the sauce with salt and pepper, then gradually stir in the heavy cream. Bring the sauce back to a simmer and let it cook for an additional 3-5 minutes, allowing the flavors to meld.
  • Toss the cooked and drained pasta in the creamy garlic sauce until well coated.
  • Serve the crispy garlic parmesan chicken on top of the pasta. Garnish with chopped parsley if desired. Enjoy your delicious meal!

Notes

For a lighter version, you can use half-and-half or milk instead of heavy cream in the sauce.
