1cupheavy cream
14chicken broth
1teaspoonItalian seasoning
12parmesan cheese
1cupchopped spinach
11/2sun-dried tomatoes

12ounceszucchini noodles

Instructions
Heat olive oil in a large (10-12”) cast-iron skillet over medium heat. Add the sliced Kiolbassa sausage and cook for 2-3 minutes per side until browned. Remove and set aside.
In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.
Pour in the heavy cream, chicken broth, Italian seasoning, and parmesan cheese. Increase the heat to medium-high and whisk until the sauce bubbles and thickens.
Add the spinach and sun-dried tomatoes to the skillet. Simmer until the spinach wilts. Return the sausage to the skillet and add the zucchini noodles. Cook for 2-3 minutes until heated through.
Season with salt and pepper to taste. Serve hot, topped with fresh basil.
Notes
For a lighter version, you can use half-and-half instead of heavy cream.
