  • 1 package Kiolbassa Roasted Garlic sausage, cut into rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 4 chicken broth
  • 1 teaspoon Italian seasoning
  • 1 2 parmesan cheese
  • 1 cup chopped spinach
  • 1 1/2 sun-dried tomatoes
  • 1 to taste salt and pepper
  • 12 ounces zucchini noodles
  • 1 for topping fresh basil

Instructions
 

  • Heat olive oil in a large (10-12”) cast-iron skillet over medium heat. Add the sliced Kiolbassa sausage and cook for 2-3 minutes per side until browned. Remove and set aside.
  • In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the heavy cream, chicken broth, Italian seasoning, and parmesan cheese. Increase the heat to medium-high and whisk until the sauce bubbles and thickens.
  • Add the spinach and sun-dried tomatoes to the skillet. Simmer until the spinach wilts. Return the sausage to the skillet and add the zucchini noodles. Cook for 2-3 minutes until heated through.
  • Season with salt and pepper to taste. Serve hot, topped with fresh basil.

Notes

For a lighter version, you can use half-and-half instead of heavy cream.
