  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 4 cloves minced garlic
  • 12 ounces mild Italian chicken sausage, cut into 1” chunks
  • 2 cups dry orzo
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon pepper
  • 0.5 cup canned full-fat coconut milk or heavy cream
  • 0.5 cup freshly grated parmesan
  • 5 ounces baby spinach
  • 1 pinch crushed red pepper, for serving (optional)
  • 1 bunch fresh basil, for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cook for about 5 minutes, stirring occasionally.
  • Add the cut chicken sausage to the skillet and sauté for another 5-6 minutes until golden.
  • Toss in the orzo and cook for 1 minute to toast. Pour in the chicken broth, coconut milk, salt, pepper, and Italian seasoning. Bring to a boil, then cover and simmer for 10-12 minutes until the orzo is cooked.
  • Stir in the baby spinach and parmesan. Mix until the spinach wilts and the parmesan melts.
  • Serve with extra parmesan cheese, fresh basil, and crushed red pepper if desired.

Notes

For a spicier kick, add more crushed red pepper flakes. You can also substitute heavy cream for coconut milk for a richer flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
