Main Ingredients

  • 2 cups cottage cheese preferably full-fat
  • 4 tablespoons powdered sweetener allulose, monk fruit, or erythritol
  • 2 tablespoons fresh lemon juice adjust to taste
  • 2 teaspoons lemon zest plus more for topping
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream if needed for blending
  • 1 2 cup fresh berries for topping

Instructions
 

  • In a high-speed blender or food processor, combine cottage cheese, powdered sweetener, lemon juice, lemon zest, and vanilla extract. Blend for 30–60 seconds until completely smooth.
  • If the mousse is too thick, add 1–2 tbsp of heavy cream at a time and blend again until silky and light.
  • For the best flavor and texture, refrigerate for 15–20 minutes before serving.

Notes

Top with fresh berries and a sprinkle of lemon zest for a burst of flavor. Adjust the sweetness by adding more or less powdered sweetener according to your preference.
