Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 pound potato gnocchi
  • 1 teaspoon olive oil
  • 3 tablespoons butter
  • 3 teaspoons minced garlic
  • 1 cup low sodium beef broth
  • 0.5 cup heavy cream (or fat-free half and half)
  • 4 tablespoons freshly squeezed lemon juice
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon cracked black pepper (or to taste)
  • Optional toppings: cracked black pepper, grated parmesan cheese, fresh thyme or parsley

Instructions
 

  • Bring a large pot of water to a boil. Add the gnocchi and boil for 3 minutes. Use a slotted spoon to remove them and toss with 1 teaspoon of olive oil in a large bowl. Set aside.
  • In a large skillet over medium-high heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the cooked gnocchi and shrimp to the skillet. Cook for 2-3 minutes, stirring gently.
  • Stir in the beef broth, lemon juice, and heavy cream. Reduce the heat to medium-low and let it simmer for 5-10 minutes until the sauce thickens and reduces by half.
  • Season with salt and pepper to taste. Garnish with optional toppings like herbs, cracked black pepper, or parmesan cheese, and serve immediately.

Notes

For a lighter version, you can use fat-free half and half instead of heavy cream. Feel free to add vegetables like spinach or cherry tomatoes for extra flavor and nutrition.
