Instructions
In a large pot, bring the chicken broth and 1 teaspoon of salt to a boil.
Add the cauliflower to the pot and bring it back to a boil.
Reduce the heat to low, cover, and steam the cauliflower for about 20 minutes, or until very soft.
Using a slotted spoon, transfer the cauliflower to a food processor.
In the same pot, combine the butter and 3 tablespoons of the chicken broth. Mix until smooth.
Season with additional salt and freshly ground pepper to taste.
Blend in the thyme until evenly combined.
Notes
For extra creaminess, add a splash of milk or cream when blending the cauliflower.
