  • Large pot For steaming the cauliflower.
  • Food processor For blending the cauliflower into a creamy consistency.

Ingredients
  

Main Ingredients

  • 1 head cauliflower, cut into ½-inch pieces About 2 lbs.
  • 1 cup chicken broth
  • 1 teaspoon salt Plus more to taste
  • 3 tablespoons unsalted butter Cut into chunks
  • 1 teaspoon chopped fresh thyme
  • 1 to taste freshly ground black pepper

Instructions
 

  • In a large pot, bring the chicken broth and 1 teaspoon of salt to a boil.
  • Add the cauliflower to the pot and bring it back to a boil.
  • Reduce the heat to low, cover, and steam the cauliflower for about 20 minutes, or until very soft.
  • Using a slotted spoon, transfer the cauliflower to a food processor.
  • In the same pot, combine the butter and 3 tablespoons of the chicken broth. Mix until smooth.
  • Season with additional salt and freshly ground pepper to taste.
  • Blend in the thyme until evenly combined.

Notes

For extra creaminess, add a splash of milk or cream when blending the cauliflower.
