  • 0.25 cup butter
  • 0.5 cup minced celery
  • 1.5 tablespoons minced shallots
  • 2 quarts half-and-half cream
  • 48 ounces fresh shucked oysters
  • 0.5 pinch cayenne pepper
  • Salt
  • Ground black pepper

Instructions
 

  • In a large skillet over medium heat, melt the butter. Add the celery and shallots, cooking and stirring until the shallots are tender, about 3 to 5 minutes.
  • In a large pot over medium-high heat, warm the half-and-half. Add the cooked celery and shallot mixture, stirring continuously until it's about to boil.
  • Then, add the oysters with their liquid, and season with cayenne pepper, salt, and pepper. Cook the stew, stirring continuously, until the oysters curl at the ends.
  • Turn off the heat and serve immediately.

Notes

For a richer flavor, consider adding a splash of Worcestershire sauce or a sprinkle of fresh herbs like parsley or chives before serving.
