Preheat your oven to 400ºF (200ºC). Toss grape tomatoes with 2 tbsp of olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until blistered.
Season the chicken breasts with garlic powder, paprika, salt, and pepper.
In a large skillet, heat 2 tbsp of olive oil over medium heat. Cook the chicken breasts for about 5 minutes on each side until browned and cooked through. Set aside.
In the same skillet, cook the chopped onion until slightly caramelized. Add minced garlic and cook for 30 seconds.
Stir in the pesto, then add the whipping cream and parmesan. Gently stir and bring to a simmer.
Add the cooked chicken and roasted tomatoes to the skillet. Reheat for a couple of minutes.
