Creamy Roasted Red Pepper Pasta

Ingredients
  

Main Ingredients

  • 14 oz 400 g Long-Cut Pasta (such as Linguine)
  • 16 oz 450 g jar of Roasted Red Peppers
  • 1 tbsp Butter
  • 1 medium White Onion diced
  • 2 small cloves of Garlic finely diced
  • 1 cup 240 ml Heavy Cream, at room temperature
  • 1/2 cup 40 g Parmesan, finely grated (plus extra for serving)
  • 1 tbsp finely diced Fresh Parsley plus extra to serve
  • 1/2 tsp Smoked Paprika
  • Pinch of Chili Flakes to preference
  • Salt & Black Pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  • While the pasta cooks, squeeze the brine out of the roasted red peppers and discard (do not rinse). This step enhances the flavor of the sauce.
  • In a large deep pan, melt the butter over medium heat. Add the diced onion and sauté until soft and golden, about 5-7 minutes. This brings out the sweetness of the onion.
  • Add the minced garlic to the pan and cook for an additional minute, just until fragrant. Be careful not to burn the garlic!
  • Transfer the onion and garlic mixture to a blender along with the roasted red peppers. Blend until smooth for a creamy sauce.
  • Pour the blended mixture back into the pan and keep on low heat. Stir in the heavy cream and mix until fully combined, allowing the flavors to meld together.
  • Add the grated Parmesan, diced parsley, smoked paprika, and season with salt and black pepper to taste. Stir well to incorporate all ingredients.
  • Using tongs, add the cooked pasta directly from the pot into the sauce. Toss until the pasta is completely coated. If the sauce becomes too thick, add a splash of the reserved pasta water to loosen it.
  • Serve immediately, garnished with extra Parmesan and parsley. Enjoy your delicious creamy pasta!

Notes

For a little extra kick, adjust the amount of chili flakes to your liking. Feel free to add cooked chicken or vegetables for added nutrition. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
