  • 1 tablespoon extra virgin olive oil
  • 0.5 small white onion, diced
  • 3 cloves garlic, minced
  • 1 pound mild Italian sausage
  • 6 ounces tomato paste
  • 14.5 ounces diced tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 0.5 cup cream cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.25 cup parmesan cheese

Instructions
 

  • Heat olive oil in a large pan over medium heat. Add the diced onions and cook until they become slightly soft, about 3-4 minutes.
  • Add minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
  • Add the mild Italian sausage, breaking it up with a spatula. Cook until no longer pink, stirring frequently, about 5-7 minutes.
  • Stir in the tomato paste, diced tomatoes, Italian seasoning, kosher salt, and black pepper.
  • Add cream cheese and chicken broth to the pan, stirring until the cream cheese is fully melted.
  • Pour in the heavy cream and sprinkle in the parmesan cheese. Stir until everything is well combined.
  • Cover the pan with a lid, reduce the heat to low, and let the mixture simmer for 5 minutes.
  • Before serving, garnish with fresh chopped parsley and additional parmesan cheese.
