  • 5.5 ounces Italian sausage, crumbled
  • 3 cloves garlic, minced
  • 0.25 cup chicken broth
  • 14 ounces diced tomatoes with juices
  • 0.5 cup heavy/whipping cream
  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • salt & pepper, to taste
  • freshly grated parmesan cheese, optional, to taste

Instructions
 

  • In a skillet, cook the crumbled sausage over medium-high heat until browned, about 5-7 minutes. If there's excess fat, drain most of it, leaving the sausage in the pan.
  • Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and add the diced tomatoes with their juices. Stir well to combine.
  • Next, add the heavy cream and bring the mixture to a gentle simmer. Allow it to cook uncovered for 5-7 minutes until the tortellini is cooked and the sauce has thickened slightly.
  • Stir in the refrigerated cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
  • Once the tortellini is tender, fold in the fresh baby spinach and let it wilt, which takes just a couple of minutes.
  • Season the dish with salt and pepper to taste.
  • Serve hot, topped with freshly grated parmesan cheese, if desired.

Notes

For a lighter option, use turkey or chicken sausages instead of beef. To add extra flavor, sprinkle red pepper flakes or Italian seasoning before serving. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
